Dark Chocolate Brownie Energy Bites

Calling all Fierce45 weekend warriors. Need to up your snack game? Whip up these Dark Chocolate Brownie Energy Bites from one of Denver’s own food bloggers, Lauren Grier of Climbing Grier Mountain. Ready in about 30 minutes, these will become one of your favorite new go-to, no-bake snacks (or dessert)!




1/4 cup unsalted pistachios, shelled

1/4 cup unsalted almonds

12 medjool dates, pitted, roughly chopped

2/3 cup almond butter

1/3 cup unsweetened cocoa

2 tbsp water

1 tsp vanilla extract

1/4 tsp kosher salt

1/2 cup dark chocolate chips, melted


Preheat a skillet to medium heat. Add the pistachios and almonds to the skillet and toast the nuts until slightly golden brown. About four to five minutes. Remove the skillet from the heat and let the nuts cool slightly. Once cooled, add the nuts to a blender or food processor and blend until finely chopped. Pour the finely chopped nuts into a large bowl.

Next, add the dates, almond butter, cocoa, water, vanilla extra, and salt to the blender or food processor. Blend until smooth. Pour mixture into a bowl and roll into about 15 one-inch sized balls. Take each of the ball and roll in the pistachio/almond mixture. Place the ball on a baking sheet. Repeat process with remaining bites and place in the fridge for 30 minutes to set. Remove from fridge and garnish tops with melted chocolate.
